The Approved Leave Sour fundamentally takes the profile a fruited gose that’s been heavily bastardised to feature a good dose of Australian Galaxy hops and a Pacific Ale that’s spent a bit too long in South Asia and Europe.
Yep, you’ve got QLD mangoes and fresh passionfruits and a little coriander seed spice.
We’ve also sacked the use of any wheat in the brewing process - strictly focusing on Pale and Carapils barley malts.
We spike the water with bacterially cultured lactic acid for a subtle tang, and with mineral salts and sea salt for both their flavour profile and for their electrolyte content - this beer has a fairly gypsum heavy, slightly salted water profile, emulating the original mineral rich waters found at Goslar in Germany where the inspiration for this beer originated.
Galaxy hops are added at flame-out to keep the beer only mildly bitter, but distinctively hoppy.
After resting the beer for a few days, it’s force carbonated to a lively 3.5 volumes and pumped into some nice purple tinnies.
